Simon M. Eder, a cultural manager, took over the 44-year-old Romeo and stripped it back to something cleaner and quieter. The result is Bitterbar — a small aperitivo bar where vermouth is the point, not an afterthought.

The drink menu is built around Wermut, served in the classical way: on ice, with a splash of soda, citrus, and an olive. The selection is curated — not a gimmick list, but a real collection of bottles that taste different from each other. It's the kind of place where the bartender will talk about what you're drinking without performing about it.

Food is minimal and intentional. Fried pimientos, olives, tinned sardines, grilled apricots with prosciutto and burrata. The snacks work because they're not trying to be a meal — they're built to sit alongside a drink and a conversation.

The Margaretenplatz Moment

The 5th has been quietly rewiring itself. Wildkaffee opened in the Pilgramgasse as a specialty café that takes coffee seriously. Lepschi, a bar run by younger gastronomes, has turned the Schönbrunner Straße corner into a place people actually go at night. Pixelpizza brought a kind of urban energy that felt foreign to the district a few years ago. Bitterbar fits into that pattern — not trendy, just attentive. The garden seating on Margaretenplatz is genuinely pleasant, and the bar is walk-in friendly. No reservation needed, no gatekeeping. The neighbourhood comes first.
