The operation is entirely organic. Everything is made downstairs in a cellar laboratory — the kind of setup that sounds like it belongs in a food-science documentary. The flavours reflect this: they're not safe. Beetroot and poppyseed. Avocado. Buffalo milk. French caramel. Lemon sorbet. Each one tastes like someone asked a question and then actually answered it, rather than playing it safe with vanilla and pistachio.
The Signature
