Susuru opened in May 2026 at Kirchengasse 18, in the middle of Neubau. It's a Japanese izakaya and sake bar run by chef Tenta Akaike, and it arrived with a specific proposition: ramen, sake, and the kind of shared eating that doesn't require a plan.

The name means "to slurp" in Japanese. That's the register. Not fine dining, not a showcase kitchen — a place where the pace is informal and the food is built for conversation and second rounds.
